we must support building of high-standards "super"-organic small farms, backbone of soldier class, network of town centers and every family has steppe ponies for fast transport without need for roads

America's food revolution. One thing that hipster culcha does genuinely well is good coffee and good food. mfw @CityBureaucrat invites me to Alinea in Chicongo on public city expense account city-journal.org/html/americ…

The "whypipo food is bad" smear does have some truth behind it in the sense that American cuisine ~1930-90 was pretty bad. And many people still eat packaged mac & cheese, inane casseroles; then there's the wonderbread meme...it's genuinely bad bread

But judging "white pepo" food by Midbest/modern-era packaged-good "cuisine"--wonderbread & mayo stuff--is disingenuous. Like judging "POC food" by Colombian specialties fried salami for breakfast, or wretched "arepas" made from """corn""" flour that even ants won't touch

Japanese cuisine is very good, but it's absurd to give Michelin stars to a noodle joint; article makes some good points

Older article: Japanese restaurants themselves reject Michelin ratings. Different take but I like the reasoning used here to turn down a prize. "You're not qualified..." nytimes.com/2008/02/24/busin…
